Tenderize Those Collard Greens
Got a tough bunch of collards?  Make sure to rinse them well and remove the thick stems.  Put the collards in the pot and cover them with water.  Add your seasonings (salt, pepper, garlic).  To tenderize, add a heaping tablespoon of vinegar (white or rice).  Bring the greens to a boil and then turn down the heat to a simmer.  Cover and let simmer for 2 hours. The vinegar helps to make the greens nice and tender.  Collard Greens are super healthy and rich in Vitamin A.


Aromatic Ginger and Green Tea
Need a warm lift during the cool weather?  Cut chunks of ginger and put into a pot.  Fill the pot with water and bring the water to a boil.  Turn down the heat to low and let simmer for about 20 minutes.  The fragrant ginger will infuse your house.   Choose your favorite mug.  Place a green tea bag inside.  Fill the cup with the ginger-infused water.  Heartwarming.
